In Rarotonga Cook Islands, fruit is a very important part of the diet for the locals. All over the island, there are fruit stands along the side of the road and the sprouted coconut, or uto, is a local favorite. Inside the coconut, this soft, sponge-like formation is known as Uto. It’s a natural source of quick energy that improves digestion and absorption of nutrients among many other benefits.
